Star Anise Oil (Star aniseed Oil, CAS NO. 8007-70-3) is obtained from steam distillation from fresh and partly dried the fruit of the Chinese evergreen tree Illicium verum and it is present in the fruit shell, not in the seed. The oil is a clear, colourless to pale yellow liquid, with aromatic, sweet and pleasant fragrance that is similar to that of Anise, but less subtle and slightly bitterer.
Anethole (Trans-Anethole, CAS No.104-46-1) also known as anise camphor. Anethole is an organic compound that is widely used as a flavoring substance. It is a derivative of phenylpropene, a type of aromatic compound that occurs widely in nature, in essential oils. It is in the class of phenylpropanoid organic compounds.
Anethole is distinctly sweet, measuring 13 times sweeter than sugar. It is perceived as being pleasant to the taste even at higher concentrations. It is used in alcoholic drinks ouzo, rakı, anisette and absinthe, among others. It is also used in seasoning and confectionery applications, oral hygiene products, and in small quantities in natural berry flavors.
